Lipopeptide Biosurfactants from Bacillus spp.: Types, Production, Biological Activities, and Applications in Food

Biosurfactants are a functionally and structurally heterogeneous group of biomolecules produced by multiple filamentous fungi, yeast, bacteria, characterized their distinct surface emulsifying ability. The genus Bacillus is well studied for biosurfactant production as it produces various types lipopeptides, example, lichenysins, bacillomycin, fengycins, surfactins. lipopeptides possess broad spectrum biological activities such antimicrobial, antitumor, immunosuppressant, antidiabetic, in addition to use skincare. Moreover, also involved food products increase the surfactant, emulsification impact. From previously published articles, can be concluded that biosurfactants have strong potential used food, healthcare, agriculture. In this review article, we discuss versatile functions lipopeptide species with particular emphasis on applications food.
